Ingredients
4 tablespoons unsalted butter
10 ounces mini marshmallows
1 1/2 tablespoons pumpkin puree
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
6 cups Rice Krispies cereal
1/3 cup white chocolate or icing for drizzle (optional)
Instructions
1. In a large non-stick pot, melt the butter over medium heat.
2. Add mini marshmallows and stir until fully melted and smooth.
3. Stir in the pumpkin puree, pumpkin pie spice, and vanilla extract until fully blended.
4. Remove from heat and fold in the Rice Krispies cereal until evenly coated.
5. Press mixture into a greased or parchment-lined 9×13-inch baking dish using a greased spatula or wax paper.
6. Drizzle with melted white chocolate or icing, if desired.
7. Let cool completely before slicing into squares.
Notes
For a deeper flavor, brown the butter before adding the marshmallows.
Don’t over-press the mixture into the pan—gentle pressure keeps them soft and chewy.
If using white chocolate, drizzle when the bars are still slightly warm for a nice set.
