Description
These Protein Firecracker Ground Chicken Bowls are the ultimate weeknight dinner—bold, spicy, sweet, and deeply satisfying. Ground chicken is cooked to golden perfection, tossed in a sticky firecracker glaze, and served over fluffy white rice with scallions and sesame seeds. Ideal for meal prep, gluten-free adaptations, or low-carb swaps!
Ingredients
1 lb ground chicken
2 cloves garlic, minced
3 green onions, chopped (divided for cooking and garnish)
3 tablespoons soy sauce
1/3 cup buffalo sauce
1/4 cup brown sugar
1/4 teaspoon red pepper flakes (optional)
2 cups cooked white rice
1 teaspoon sesame seeds
1 tablespoon olive oil
Instructions
1. In a small bowl, whisk together soy sauce, buffalo sauce, and brown sugar. Set aside.
2. Heat olive oil in a large nonstick skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
3. Add ground chicken to the skillet. Break it apart with a spatula and cook for 6–8 minutes until browned and cooked through.
4. Pour the firecracker sauce into the skillet and stir to coat the chicken. Let simmer for 3–4 minutes until the sauce thickens and clings to the meat.
5. Assemble the bowls by adding cooked white rice to serving bowls. Top with firecracker chicken.
6. Garnish with chopped green onions and sesame seeds. Add red pepper flakes for extra heat if desired.
7. Serve immediately, or store in airtight containers for up to 4 days.
Notes
For best flavor, don’t skip browning the chicken—it helps caramelize the sauce and builds flavor.
Add a splash of water when reheating to keep the chicken juicy and saucy.
This dish works great with cauliflower rice if you’re watching your carbs!
