Ingredients
- 4 cups pecans (or nut of choice)
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 300°F (150°C). Toast pecans on a parchment-lined baking sheet for 8–10 minutes.
- In a saucepan, melt butter, brown sugar, and corn syrup over medium heat. Stir constantly until it comes to a boil.
- Let the mixture boil for 3–5 minutes. Remove from heat and stir in salt, baking soda, and vanilla. The mixture will foam.
- Pour the mixture over the toasted pecans and toss to coat thoroughly.
- Lower oven to 250°F (120°C). Spread coated pecans on the baking sheet and bake for 45 minutes, stirring every 15 minutes.
- Cool completely and break into clusters.
