These Pineapple Chicken Kabobs are a tropical grilling dream—featuring juicy marinated chicken chunks and sweet, caramelized pineapple. Perfect for summer BBQs, weeknight dinners, or entertaining guests. The flavor combination is sweet, savory, tangy, and irresistibly juicy.
Ingredients
1.5 lbs chicken breast, boneless and skinless
2 cups fresh pineapple chunks
1/4 cup soy sauce
3 tablespoons honey
3 cloves garlic, minced
1 tablespoon grated fresh ginger
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. In a bowl, whisk together soy sauce, honey, garlic, ginger, olive oil, salt, and pepper.
2. Cut chicken into 1.5-inch cubes and place in a bowl or bag. Pour marinade over chicken and mix well.
3. Cover and refrigerate for at least 30 minutes or up to 4 hours.
4. Soak bamboo skewers in water for 30 minutes if using.
5. Thread marinated chicken and pineapple chunks onto the skewers, alternating.
6. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
7. Grill skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and charred.
8. Let rest for 2 minutes, then serve hot with your favorite side.
Notes
For even cooking, ensure all chicken pieces are the same size.
Don’t marinate longer than 4 hours, or the pineapple acid may break down the meat too much.
Leftovers can be repurposed into wraps, salads, or rice bowls.
