Ingredients
1 double pie crust (homemade or store-bought)
6 to 7 medium Granny Smith apples
¾ cup brown sugar
½ cup unsalted butter
½ cup heavy cream
1 teaspoon vanilla extract
1 tablespoon cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon salt
1 egg (for egg wash)
Instructions
1. Peel, core, and slice apples evenly. Toss them with cinnamon, nutmeg, cornstarch, and salt. Set aside to marinate.
2. In a saucepan over medium heat, melt butter and brown sugar until bubbling. Whisk in the heavy cream, stirring constantly until smooth and thick. Remove from heat and stir in vanilla extract.
3. Pour half the toffee sauce over the apples and mix gently to coat. Reserve the remaining sauce for topping.
4. Preheat the oven to 375°F (190°C). Roll out the bottom crust into a 9-inch pie dish. Fill with the toffee-coated apples.
5. Drizzle more toffee over the top (not all of it), then create a lattice crust with the second dough.
6. Brush the crust with a beaten egg for a golden finish.
7. Bake for 45–50 minutes or until the crust is golden brown and the filling is bubbling.
8. Cool the pie for at least 1 hour before slicing. Serve warm with ice cream and extra toffee drizzle.
Notes
Let the pie rest after baking so the filling sets properly before slicing.
For an ultra-crisp bottom crust, blind bake for 5 minutes before adding filling.
