Ingredients

1 pie crust

3 cups fresh spinach

3/4 cup crumbled feta cheese

4 large eggs

1/2 cup heavy cream

1/2 cup milk

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for sautéing spinach)


Instructions

1. Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish. Prick the base, line with parchment, add pie weights, and blind bake for 10 minutes. Remove weights and bake an additional 5 minutes until lightly golden.

2. Heat olive oil in a skillet over medium heat. Sauté spinach until wilted. Remove and press out excess moisture.

3. In a large mixing bowl, whisk together eggs, heavy cream, milk, salt, and pepper.

4. Layer cooked spinach into baked pie crust. Sprinkle feta cheese evenly over top.

5. Pour egg mixture over the filling and spread evenly.

6. Bake for 35–40 minutes or until the center is set and the top is golden. Cool for 10 minutes before slicing.

Notes

Make sure to remove all excess moisture from the sautéed spinach to prevent a soggy crust.

You can prepare this quiche a day ahead and reheat it—flavors deepen beautifully overnight.

For a richer texture, replace half the milk with more heavy cream.
