Ingredients
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
1 cup granulated sugar
2 large eggs
¼ cup vegetable oil
1 teaspoon vanilla extract
½ cup semi-sweet chocolate chips
½ cup powdered sugar (for coating)
Instructions
1. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
2. In another bowl, beat together eggs, sugar, vegetable oil, and vanilla extract until smooth.
3. Gradually stir dry ingredients into wet mixture. Fold in chocolate chips.
4. Cover and refrigerate dough for at least 2 hours, or until firm.
5. Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.
6. Place powdered sugar in a shallow bowl.
7. Scoop tablespoon-sized portions of dough, roll into balls, and coat generously in powdered sugar.
8. Place dough balls on prepared baking sheet, spacing 2 inches apart.
9. Bake 10–12 minutes or until tops are crackled and edges set.
10. Let cool 2–3 minutes on sheet before transferring to wire rack to cool completely.
