Description

A simple yet flavorful Italian classic, Penne Pomodoro combines pasta with a fresh tomato sauce, garlic, basil, and parmesan for a dish that feels elegant and cozy. Perfect for weeknights or casual dinner parties, it’s a go-to comfort meal that comes together quickly.


Ingredients

12 oz penne pasta

2 cups cherry tomatoes

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1/2 cup fresh basil leaves, torn

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/3 cup freshly grated Parmesan cheese

1/2 cup reserved pasta water


Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne until al dente. Reserve 1/2 cup pasta water and drain the rest.
  2. In a large skillet over medium heat, warm the olive oil. Add minced garlic and cook for about 1 minute until fragrant.
  3. Add cherry tomatoes and cook, stirring occasionally, for 8-10 minutes until they blister and begin to burst.
  4. Gently crush some tomatoes with a wooden spoon to create a light sauce.
  5. Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
  6. Add torn basil leaves, salt, and pepper. Mix well.
  7. Serve immediately, topped with grated Parmesan and extra basil for garnish.
