Ingredients
12 oz penne pasta
2 cups cherry tomatoes
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 cup fresh basil leaves, torn
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup freshly grated Parmesan cheese
1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook the penne until al dente. Reserve 1/2 cup pasta water and drain the rest.
- In a large skillet over medium heat, warm the olive oil. Add minced garlic and cook for about 1 minute until fragrant.
- Add cherry tomatoes and cook, stirring occasionally, for 8-10 minutes until they blister and begin to burst.
- Gently crush some tomatoes with a wooden spoon to create a light sauce.
- Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
- Add torn basil leaves, salt, and pepper. Mix well.
- Serve immediately, topped with grated Parmesan and extra basil for garnish.
