Description

These Peach Bellini Cupcakes blend the sweet, juicy essence of peach with the bubbly charm of sparkling wine in a light, fluffy cupcake. Topped with silky peach buttercream and a peach slice, they capture the summer spirit in every bite. Perfect for brunches, bridal showers, or anytime you want to bring elegance to dessert.


Ingredients

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/4 cup peach nectar

1/4 cup sparkling wine (or white grape juice)

Fresh peach slices, for garnish

For the Peach Buttercream:

3/4 cup unsalted butter, softened

3 cups powdered sugar

3 tbsp peach jam or preserves

23 tbsp heavy cream

A drop of peach or pink food coloring (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a medium bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until fluffy.
  4. Beat in eggs one at a time, then mix in vanilla.
  5. Combine peach nectar and sparkling wine.
  6. Alternate adding dry ingredients and nectar/wine mixture to the butter mixture, starting and ending with dry ingredients.
  7. Divide batter into liners, filling 2/3 full.
  8. Bake 18-22 minutes, or until a toothpick comes out clean. Cool completely.
  9. For buttercream, beat butter until creamy, add sugar gradually, then jam and cream until smooth. Tint with food coloring if desired.
  10. Frost cupcakes and garnish with peach slices.
