These Peach Bellini Cupcakes blend the sweet, juicy essence of peach with the bubbly charm of sparkling wine in a light, fluffy cupcake. Ingredients
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup peach nectar
1/4 cup sparkling wine (or white grape juice)
Fresh peach slices, for garnish
For the Peach Buttercream:
3/4 cup unsalted butter, softened
3 cups powdered sugar
3 tbsp peach jam or preserves
2–3 tbsp heavy cream
A drop of peach or pink food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a medium bowl, whisk flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until fluffy.
- Beat in eggs one at a time, then mix in vanilla.
- Combine peach nectar and sparkling wine.
- Alternate adding dry ingredients and nectar/wine mixture to the butter mixture, starting and ending with dry ingredients.
- Divide batter into liners, filling 2/3 full.
- Bake 18-22 minutes, or until a toothpick comes out clean. Cool completely.
- For buttercream, beat butter until creamy, add sugar gradually, then jam and cream until smooth. Tint with food coloring if desired.
- Frost cupcakes and garnish with peach slices.
