Description
Crispy on the outside, fluffy on the inside—these Parmesan Roasted Red Potatoes are oven-baked with garlic, paprika, and a golden Parmesan crust. The perfect savory side dish for any dinner or holiday spread!
Ingredients
1.5 lbs red potatoes
2 tablespoons olive oil
2 cloves fresh garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon chopped fresh chives (optional)
Instructions
1. Wash and dry the red potatoes thoroughly. Slice into 1/4 to 1/2-inch thick rounds for even roasting.
2. In a large bowl, toss the potato slices with olive oil, minced garlic, salt, pepper, and paprika until evenly coated.
3. Line a baking sheet with parchment paper. Sprinkle Parmesan cheese evenly across the bottom.
4. Place potato slices on top of the cheese, pressing gently so they adhere to the Parmesan layer.
5. Bake at 400°F (200°C) for 25–30 minutes until bottoms are golden and crisp and tops are tender.
6. Let cool for 2–3 minutes. Garnish with chopped chives and serve warm. Pair with sour cream or aioli if desired.
Notes
Slice potatoes evenly to ensure they roast at the same rate.
Don’t overcrowd the baking sheet—give each slice room for proper crisping.
For extra crunch, broil for 1–2 minutes at the end of baking.
