These Parmesan Roasted Potatoes are crispy on the outside, soft and fluffy on the inside, and packed with garlic and cheesy goodness. Whether you’re serving them as a side for dinner or as part of a brunch spread, they’re always a crowd-pleaser.
Ingredients
1.5 lbs baby potatoes, halved
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Optional: 1/4 cup cooked crumbled bacon
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss halved baby potatoes with olive oil, minced garlic, salt, and pepper.
- Arrange the potatoes cut-side down on the prepared baking sheet.
- Roast for 35-40 minutes, until the bottoms are golden and crispy.
- Sprinkle Parmesan over the hot potatoes and return to oven for 5-7 minutes.
- Remove from oven, sprinkle with fresh parsley and bacon if using.
- Serve hot and enjoy!
