Description

These Parmesan Crusted Chicken Bites are crispy, juicy, and full of flavor. Paired with smoked Cajun Alfredo Gemelli pasta, it’s a comforting, flavor-packed dish perfect for weeknight dinners or cozy weekend meals. Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs

1 cup finely grated Parmesan cheese

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (or regular paprika)

1/2 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray or light drizzle

12 oz gemelli pasta

2 tablespoons butter

3 garlic cloves, minced

1.5 cups heavy cream

1 cup grated Parmesan cheese

2 teaspoons Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon chopped fresh parsley (optional garnish)


Instructions

1. In three shallow bowls, place flour in one, whisked eggs in another, and the mix of Parmesan, panko, and spices in the third.

2. Dredge each piece of chicken in flour, dip in egg, then coat in the Parmesan-panko mixture.

3. Arrange on a wire rack over a baking sheet or in an air fryer basket. Spray with olive oil.

4. Bake at 425°F or air fry at 400°F for 12-15 minutes, until golden and cooked through.

5. Meanwhile, boil gemelli pasta in salted water until al dente. Drain and set aside.

6. In a large skillet, melt butter over medium heat. Sauté garlic for 1 minute.

7. Add heavy cream, bring to a simmer, and stir in Parmesan, Cajun seasoning, and smoked paprika.

8. Let sauce simmer and thicken for 5–7 minutes. Season to taste.

9. Toss pasta in the sauce until fully coated.

10. Plate pasta and chicken bites side by side. Garnish with parsley and a pinch of paprika.

Notes

For ultra-crispy chicken, use a wire rack and avoid overcrowding the pan or basket.

You can prep the chicken in advance and refrigerate before cooking for quick assembly.

Add cayenne or red pepper flakes to the sauce for extra heat if you like it spicy.
