Ingredients

For the Cod:

4 cod fillets (6 oz each)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

For the Tomato Basil Sauce:

2 tablespoons olive oil

4 large ripe tomatoes, diced

3 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon crushed red pepper flakes (optional)

1/2 cup fresh basil, chopped

Salt and pepper to taste


Instructions

  1. Season the Cod: Pat cod fillets dry and season both sides with paprika, garlic powder, salt, and pepper.
  2. Sear the Cod: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the cod fillets for 3-4 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. Prepare the Sauce: In the same skillet, add 2 tablespoons of olive oil. Sauté the minced garlic for 30 seconds until fragrant.
  4. Cook the Tomatoes: Add diced tomatoes, oregano, and red pepper flakes. Season with salt and pepper. Simmer for 8-10 minutes until the sauce thickens.
  5. Combine and Serve: Return the seared cod fillets to the skillet and spoon the sauce over the fish. Simmer for 2-3 minutes. Garnish with fresh basil and serve immediately.
