Orzo with Asparagus & Feta

Description

A bright and fresh pasta dish combining tender orzo, crisp asparagus, creamy feta, and fragrant herbs. Perfect for a light main course or a vibrant side, this recipe is simple yet packed with Mediterranean-inspired flavor.


Ingredients

1 cup orzo pasta

1 bunch asparagus, trimmed and cut into 2-inch pieces

1/2 cup crumbled feta cheese

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

1 lemon, zested and juiced

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook orzo until al dente. Drain, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté asparagus for 3–4 minutes until tender. Add garlic and cook 30 seconds.
  3. Add cooked orzo to skillet. Stir in lemon zest, juice, and a splash of pasta water. Toss to combine.
  4. Remove from heat. Fold in feta, dill, and parsley. Season with salt and pepper. Drizzle with extra olive oil if desired.
