Description

Ingredients

1 ½ lbs boneless, skinless chicken breast, cut into bite-sized cubes

1 ½ cups long-grain rice pasta (or substitute with standard rice)

3 tablespoons olive oil

½ cup honey

⅓ cup soy sauce (low-sodium recommended)

4 garlic cloves, minced

1 tablespoon apple cider vinegar

1 tablespoon cornstarch

1 cup chicken broth (or water + bouillon cube)

½ teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley or green onions, chopped (for garnish)


Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and sear for 4–5 minutes until golden. Remove and set aside.
  2. In the same pan, reduce heat to medium. Add the remaining olive oil and sauté garlic for 30 seconds.
  3. Stir in honey, soy sauce, apple cider vinegar, and red pepper flakes. Simmer for 2–3 minutes.
  4. Mix cornstarch with 2 tablespoons cold water, then stir into sauce to thicken.
  5. Return chicken to the pan and coat well.
  6. Add rice pasta and chicken broth. Stir everything together.
  7. Bring to a boil, then reduce to low, cover, and simmer for 15–18 minutes, stirring occasionally, until pasta is tender and sauce is absorbed.
  8. Garnish with parsley or green onions before serving.
