Ingredients
1 ½ lbs boneless, skinless chicken breast, cut into bite-sized cubes
1 ½ cups long-grain rice pasta (or substitute with standard rice)
3 tablespoons olive oil
½ cup honey
⅓ cup soy sauce (low-sodium recommended)
4 garlic cloves, minced
1 tablespoon apple cider vinegar
1 tablespoon cornstarch
1 cup chicken broth (or water + bouillon cube)
½ teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley or green onions, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and sear for 4–5 minutes until golden. Remove and set aside.
- In the same pan, reduce heat to medium. Add the remaining olive oil and sauté garlic for 30 seconds.
- Stir in honey, soy sauce, apple cider vinegar, and red pepper flakes. Simmer for 2–3 minutes.
- Mix cornstarch with 2 tablespoons cold water, then stir into sauce to thicken.
- Return chicken to the pan and coat well.
- Add rice pasta and chicken broth. Stir everything together.
- Bring to a boil, then reduce to low, cover, and simmer for 15–18 minutes, stirring occasionally, until pasta is tender and sauce is absorbed.
- Garnish with parsley or green onions before serving.
