This hearty One-Pot Macaroni Cheeseburger Soup combines all the flavors of a juicy cheeseburger in a creamy, comforting soup. With tender pasta, seasoned ground beef, and melted cheddar cheese, it’s the ultimate cozy meal for any night of the week. Bonus: It’s all made in just one pot!
Ingredients
1 pound ground beef
1 cup elbow macaroni (uncooked)
1 1/2 cups shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1/2 cup diced carrots (optional)
4 cups beef broth
1 cup whole milk or heavy cream
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
2. Add diced onion, garlic, and carrots (if using). Sauté for 4–5 minutes until the vegetables soften and the aromatics are fragrant.
3. Stir in the tomato paste and Worcestershire sauce. Cook for 1–2 minutes to develop flavor.
4. Pour in beef broth and milk (or cream). Add salt, pepper, and Italian seasoning. Mix everything well.
5. Add elbow macaroni to the pot. Simmer uncovered, stirring occasionally, for 10–12 minutes until pasta is tender.
6. Turn off the heat and stir in shredded cheddar cheese until fully melted and the soup is creamy.
7. Taste and adjust seasoning. Serve hot, garnished with more cheese or parsley if desired.
Notes
If making ahead, cook pasta separately and add when reheating to avoid soggy noodles.
For a lighter version, use ground turkey and low-fat milk.
Freeze without pasta for better texture upon thawing.
