Ingredients
4 boneless, skinless chicken thighs
2 tablespoons lemon juice
1 teaspoon lemon zest
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped (plus extra for garnish)
1 teaspoon fresh thyme (or 1/2 teaspoon dried)
1 tablespoon olive oil (plus extra as needed)
1 cup long-grain or basmati rice
2 cups chicken broth
Salt and pepper to taste
Instructions
- In a bowl, combine chicken thighs with lemon juice, zest, garlic, parsley, thyme, olive oil, salt, and pepper. Marinate for at least 20 minutes.
- Heat olive oil in a large pot over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
- In the same pot, sauté minced garlic and herbs for 1–2 minutes.
- Add rice, stir to coat, then pour in chicken broth. Bring to a simmer.
- Nestle chicken on top, cover, and cook on low for 20–25 minutes, until rice is tender.
- Fluff rice, garnish with parsley and extra lemon zest, and serve.
