One Pot Lemon Herb Chicken Rice

Description

A cozy, flavor-packed one-pot meal with juicy chicken thighs, fragrant herbs, and fluffy rice kissed with lemon. Perfect for busy nights when you want a homemade dinner with minimal cleanup.


Ingredients

4 boneless, skinless chicken thighs

2 tablespoons lemon juice

1 teaspoon lemon zest

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus extra for garnish)

1 teaspoon fresh thyme (or 1/2 teaspoon dried)

1 tablespoon olive oil (plus extra as needed)

1 cup long-grain or basmati rice

2 cups chicken broth

Salt and pepper to taste


Instructions

  1. In a bowl, combine chicken thighs with lemon juice, zest, garlic, parsley, thyme, olive oil, salt, and pepper. Marinate for at least 20 minutes.
  2. Heat olive oil in a large pot over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  3. In the same pot, sauté minced garlic and herbs for 1–2 minutes.
  4. Add rice, stir to coat, then pour in chicken broth. Bring to a simmer.
  5. Nestle chicken on top, cover, and cook on low for 20–25 minutes, until rice is tender.
  6. Fluff rice, garnish with parsley and extra lemon zest, and serve.
