Ingredients
2 large chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
12 ounces penne pasta
3 cups chicken broth
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 tablespoons butter
2 tablespoons fresh parsley, chopped
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season chicken with salt and pepper, then sear until golden brown on both sides. Remove and set aside.
2. In the same pot, melt butter and sauté minced garlic until fragrant, about 1 minute.
3. Pour in chicken broth, bring to a boil, then add penne pasta. Cook until just al dente, stirring occasionally.
4. Reduce heat to low, stir in heavy cream and Parmesan until smooth and thickened.
5. Return chicken to the pot, toss to coat, and heat through. Garnish with parsley and optional red pepper flakes before serving.
Notes
For extra richness, add a splash of white wine to the garlic before adding broth.
