Ingredients
12 oz smoked sausage, sliced
8 oz farfalle (bowtie) pasta
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small onion, chopped
3 cloves garlic, minced
2 teaspoons Cajun seasoning (adjust to taste)
2 cups chicken broth
1 cup heavy cream
4 oz cream cheese
1 tablespoon olive oil Salt and black pepper to taste
Instructions
- 1. Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add sliced sausage and cook until browned.
- Add chopped onion and bell peppers.
- Sauté until softened, then stir in minced garlic and cook until fragrant.
- Sprinkle Cajun seasoning over the mixture and stir to combine.
- Pour in chicken broth and stir in the uncooked farfalle pasta.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 12 to 15 minutes or until pasta is tender and most of the liquid is absorbed.
- Stir in heavy cream and cream cheese.
- Mix well until the cheese is melted and the sauce is smooth and creamy.
- Let simmer uncovered for 2 to 3 minutes to thicken the sauce.
- Taste and adjust salt and pepper as needed.
- Serve hot with chopped parsley or shredded parmesan if desired.
Notes
For a richer flavor, use andouille sausage instead of regular smoked sausage.
Add a splash of milk when reheating to keep the sauce creamy.
For extra veggies, toss in spinach, mushrooms, or zucchini toward the end of cooking.
