This creamy, savory One-Pot Cheddar Ranch Chicken and Sausage Rotini is the ultimate comfort dish for busy nights. With smoky sausage, tender chicken, and perfectly cooked rotini all swirled in a rich cheddar-ranch cheese sauce, this one-pot meal delivers flavor and satisfaction in every bite.


Ingredients

2 tablespoons olive oil

1 lb boneless, skinless chicken breast (diced)

1 package (13 oz) smoked sausage (sliced)

3 cups dry rotini pasta

2 ½ cups chicken broth

1 cup milk (whole or 2%)

1 packet ranch seasoning mix

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

1 ½ cups shredded cheddar cheese

4 oz cream cheese (softened)

Fresh parsley (optional, for garnish)


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add diced chicken and cook until golden, about 5–6 minutes.

  2. Add sliced sausage and cook for an additional 3–4 minutes until lightly browned.

  3. Reduce heat to medium. Add dry rotini, chicken broth, milk, ranch seasoning, garlic powder, onion powder, and pepper. Stir well.

  4. Bring to a boil, then lower heat, cover, and simmer for 12–14 minutes. Stir occasionally until pasta is cooked and liquid mostly absorbed.

  5. Turn off heat. Stir in softened cream cheese until melted, then add shredded cheddar cheese until fully combined and creamy.

  6. Taste and adjust seasoning. Garnish with parsley if desired. Serve warm.
