Ingredients

1 lb smoked sausage, sliced into 1-inch pieces

1.5 lbs baby potatoes (Yukon or red), halved

12 oz fresh green beans, trimmed

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper


Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash and halve baby potatoes. Trim green beans and slice sausage.

3. In a large bowl, toss the sausage, potatoes, and green beans with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until well coated.

4. Spread the mixture evenly on a large sheet pan in a single layer.

5. Roast for 25-30 minutes, flipping halfway through, until the potatoes are tender, sausage is browned, and green beans are blistered.

6. Serve warm directly from the pan or transfer to a serving platter. Garnish with parsley if desired.

Notes

Be sure not to overcrowd the sheet pan to get crispy edges on the potatoes and sausage.

Use fresh green beans for the best texture, but thawed and dried frozen beans work in a pinch.
