Description

This One-Pan Hobo Casserole with Ground Beef & Veggies is a cozy, one-dish meal combining juicy ground beef, tender potatoes, sweet carrots, and melty cheddar cheese for the perfect homestyle dinner.


Ingredients

1 lb ground beef

1.5 lbs baby potatoes, halved

3 medium carrots, chopped

1 medium onion, chopped

2 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 cup shredded cheddar cheese

1 tsp Italian seasoning

Salt and pepper, to taste


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a skillet, cook ground beef over medium heat until browned. Drain fat. Season with salt, pepper, and Italian seasoning.

3. Prepare veggies: halve potatoes, chop carrots and onion, mince garlic.

4. In a greased casserole dish, layer beef, potatoes, carrots, onion, garlic. Top with diced tomatoes.

5. Cover with foil and bake 45 minutes until potatoes are tender.

6. Uncover, add cheddar cheese, bake 10 more minutes until melted and bubbly.

7. Let rest slightly; garnish with fresh parsley if desired.

Notes

Sauté onion and garlic before layering for richer flavor.

Use Yukon Gold or red potatoes for best results.

Add a pinch of red pepper flakes for mild heat.
