Ingredients

For the Chicken & Vegetables:

2 large boneless, skinless chicken breasts

1 lb baby potatoes, halved

1 cup fresh green beans, trimmed

For the Garlic Herb Butter:

3 tbsp unsalted butter, melted

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp smoked paprika

1/2 tsp salt (adjust to taste)

1/2 tsp black pepper

1 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat & Prepare Ingredients
    Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it. Wash and halve the baby potatoes, trim the green beans, and pat the chicken breasts dry.
  2. Make the Garlic Herb Butter
    In a small bowl, mix the melted butter, minced garlic, oregano, thyme, parsley, smoked paprika, salt, and black pepper. Stir well.
  3. Coat the Ingredients
    Place the chicken breasts on one side of the baking sheet, the halved potatoes in the center, and the green beans on the other side. Drizzle the olive oil over the potatoes and green beans, tossing them lightly. Brush the garlic herb butter generously over the chicken and potatoes.
  4. Roast to Perfection
    Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender. For crispier potatoes, broil for an additional 2–3 minutes.
  5. Garnish & Serve
    Let the chicken rest for a few minutes after removing it from the oven. Sprinkle freshly chopped parsley over the dish and serve hot. Enjoy!
