Ingredients
2 large chicken breasts
1 tablespoon olive oil
2 tablespoons butter (divided)
8 oz baby bella mushrooms, sliced
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
3/4 cup grated parmesan cheese
2 cups fresh spinach
1 teaspoon Italian seasoning
Salt and pepper, to taste
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Sear chicken until golden on both sides (about 5-6 minutes per side). Remove and set aside.
3. Add remaining butter to the pan. Sauté mushrooms until browned. Add garlic and cook for 1 more minute.
4. Pour in chicken broth and heavy cream. Stir to combine and simmer gently.

6. Toss in spinach and stir until just wilted.
