Ingredients

4 cups fresh or frozen blackberries

1 cup granulated sugar (plus extra for topping)

1 tablespoon lemon juice

2 tablespoons cornstarch

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup melted butter

1 cup milk


Instructions

  1. Prep the berries: Rinse and pat dry blackberries. Toss them with 1 cup sugar, lemon juice, and cornstarch. Let sit while making batter.
  2. Preheat oven: Set oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  3. Make the batter: Combine flour, baking powder, salt, and a bit of sugar. Stir in melted butter and milk to form a smooth batter.
  4. Assemble: Pour batter into dish. Spoon blackberry mixture over batter. Do not stir.
  5. Bake: Bake for 40–45 minutes until golden brown and bubbly.
  6. Cool and serve: Let rest 10 minutes. Serve warm with ice cream or whipped cream.
