A nostalgic and soul-warming dessert made with sweet-tart blackberries and a buttery, golden crust. This old-fashioned cobbler is perfect served warm with a scoop of ice cream or a drizzle of cream.
Ingredients
4 cups fresh or frozen blackberries
1 cup granulated sugar (plus extra for topping)
1 tablespoon lemon juice
2 tablespoons cornstarch
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup melted butter
1 cup milk
Instructions
- Prep the berries: Rinse and pat dry blackberries. Toss them with 1 cup sugar, lemon juice, and cornstarch. Let sit while making batter.
- Preheat oven: Set oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
- Make the batter: Combine flour, baking powder, salt, and a bit of sugar. Stir in melted butter and milk to form a smooth batter.
- Assemble: Pour batter into dish. Spoon blackberry mixture over batter. Do not stir.
- Bake: Bake for 40–45 minutes until golden brown and bubbly.
- Cool and serve: Let rest 10 minutes. Serve warm with ice cream or whipped cream.
