Description

These Oatmeal Raisin Cookie Bars are soft, chewy, and packed with cinnamon spice and juicy raisins. With an easy one-pan method, they’re the perfect blend of nostalgic comfort and modern-day convenience. A simple vanilla glaze adds a delightful finishing touch that takes these bars from everyday to extraordinary.


Ingredients

2 cups old-fashioned rolled oats

1 1/2 cups all-purpose flour

1 tsp ground cinnamon

1/2 tsp baking soda

1/2 tsp salt

3/4 cup butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 1/2 tsp vanilla extract

1 cup raisins

Optional Glaze: 1/2 cup powdered sugar + 1–2 tsp milk + splash of vanilla extract


Instructions

  1. Preheat Oven: Set oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or grease it.
  2. Mix Dry Ingredients: In a large bowl, whisk oats, flour, cinnamon, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, mix melted butter, brown sugar, granulated sugar, eggs, and vanilla until smooth.
  4. Form the Dough: Add the dry ingredients into the wet, stirring gently until just combined. Fold in raisins.
  5. Bake: Spread dough evenly in the pan. Bake for 22–25 minutes, until edges are golden and center is set.
  6. Cool & Glaze: Let bars cool in the pan. Mix glaze ingredients and drizzle over the top if desired.
