Ingredients
16 fun-size Butterfinger candy bars, crushed
8 oz cream cheese, softened
16 soft caramel squares
12 oz chocolate melting wafers (or semi-sweet chocolate chips)
2 fun-size Butterfinger bars, crushed (for topping)
Instructions
1. Crush the Butterfinger candy bars using a food processor or rolling pin inside a sealed bag until finely ground.
2. In a mixing bowl, combine the crushed Butterfingers with the softened cream cheese. Stir until the mixture is smooth and dough-like.
3. Scoop out 1 tablespoon of the mixture, flatten it slightly in your palm, and place one caramel square in the center. Fold the mixture around the caramel and roll it into a ball.
4. Place each truffle ball on a parchment-lined baking sheet. Repeat until all dough is used.
5. Freeze the truffle balls for 20 minutes to firm them up.
6. Meanwhile, melt the chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring until fully melted and smooth. Alternatively, use a double boiler.
7. Dip each chilled truffle into the melted chocolate using a fork or dipping tool. Let the excess chocolate drip off.
8. Place dipped truffles back onto parchment paper and sprinkle immediately with extra Butterfinger crumbs.
9. Let them set at room temperature or in the fridge until the chocolate hardens.
Notes
Make sure the caramel squares are soft and chewy—hard caramels won’t work well here.
Freeze the truffles before dipping to help the caramel stay in place and keep the shape.
For a glossy chocolate coating, use melting wafers or temper your chocolate if preferred.
