A warm, hearty, and spiced plant-based soup combining sweet potatoes, chickpeas, and Moroccan-inspired flavors. Perfect for chilly nights or make-ahead meals.


Ingredients

Sweet potatoes

Chickpeas (canned or cooked)

Onion

Garlic

Carrots

Tomato paste

Vegetable broth

Olive oil

Ground cumin

Ground cinnamon

Paprika

Chili flakes

Fresh parsley or cilantro (for garnish)

Sesame seeds (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent. Stir in minced garlic and cook until fragrant.
  2. Add cumin, cinnamon, paprika, and chili flakes. Stir for 30 seconds.
  3. Add chopped sweet potatoes and carrots. Cook for 3-4 minutes.
  4. Stir in tomato paste, then add vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until vegetables are tender.
  6. Blend part of the soup for a creamy texture, either with an immersion blender or by transferring to a countertop blender.
  7. Add chickpeas and simmer for 5 more minutes.
  8. Serve hot with garnish of fresh herbs, sesame seeds, and optional extra chili flakes.
