Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 medium carrots, sliced
2 ribs celery, sliced
1 medium zucchini, chopped
1 cup green beans, trimmed and cut
1 can (14.5 oz) diced tomatoes, with juice
6 cups vegetable broth
1 can (15 oz) cannellini beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 cup small pasta (like ditalini or elbow)
1 tablespoon Italian seasoning
Salt and pepper to taste
Parmesan cheese, for garnish (optional)
Chopped parsley, for garnish (optional)
Instructions
1. Heat olive oil in a large Dutch oven over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.
2. Stir in garlic and cook for 1 minute until fragrant.
3. Add zucchini, green beans, and diced tomatoes (with juice). Pour in vegetable broth. Season with Italian herbs, salt, and pepper. Bring to a gentle boil.
4. Reduce heat and simmer uncovered for 15–20 minutes, until vegetables are tender.
5. Add the beans and pasta. Simmer another 8–10 minutes until pasta is al dente, stirring occasionally.
6. Adjust seasoning. Serve hot with Parmesan and parsley if desired.
Notes
Cook pasta separately if planning to freeze the soup to prevent it from becoming mushy.
