Ingredients

2 boneless skinless chicken breasts

1 tablespoon olive oil

2 tablespoons taco seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons butter

2 tablespoons all purpose flour

1 1/2 cups milk

1 1/2 cups shredded cheddar cheese

1/4 teaspoon paprika or cayenne pepper

2 tablespoons chopped fresh cilantro

2 cups cooked white rice


Instructions

1. Pat the chicken breasts dry and season both sides with taco seasoning salt and pepper.

2. Heat olive oil in a skillet over medium high heat and sear the chicken for about 6 to 7 minutes per side until golden and fully cooked.

3. Remove the chicken from the skillet and allow it to rest for 5 minutes before slicing.

4. In a saucepan melt the butter over medium heat then whisk in the flour and cook for 1 minute to create a roux.

5. Slowly whisk in the milk and continue stirring until the sauce thickens and becomes smooth.

6. Reduce the heat and gradually stir in the shredded cheddar cheese until melted and creamy.

7. Add paprika or cayenne pepper if desired.

8. Serve the sliced chicken over cooked rice and generously spoon the cheese sauce over the top.

9. Finish with chopped fresh cilantro and serve.

Notes

Use freshly shredded cheese for the smoothest cheese sauce texture.

Allow the chicken to rest before slicing so it stays juicy.
