Description

This Mediterranean Salmon Bake is an easy one-pan meal bursting with fresh, vibrant flavors. Juicy salmon fillets are baked alongside cherry tomatoes, olives, red onions, and capers, topped with creamy feta and drizzled with a lemon herb olive oil blend. It’s healthy, flavorful, and weeknight-friendly!


Ingredients

4 salmon fillets (center cut, skin-on)

1 cup cherry tomatoes, halved

1/3 cup kalamata olives, pitted and sliced

2 tablespoons capers, drained

1/2 red onion, thinly sliced

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh basil, chopped

1/3 cup feta cheese, crumbled

3 tablespoons extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon lemon zest

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper or lightly oil it.

2. In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, salt, and pepper.

3. Place salmon fillets in the prepared dish, skin-side down. Surround them with cherry tomatoes, olives, red onion, and capers.

4. Drizzle the olive oil mixture over the salmon and vegetables.

5. Sprinkle crumbled feta evenly on top.

6. Bake for 15–18 minutes, or until salmon flakes easily with a fork. Optional: broil for 2–3 minutes at the end for golden top.

7. Remove from oven, garnish with fresh basil and lemon wedges, and serve warm.

Notes

For best texture, use center-cut salmon fillets with skin on.

If using frozen salmon, fully thaw and pat dry before baking.

Broiling at the end gives the feta and tomatoes a beautiful caramelized finish.
