Ingredients
2 boneless, skinless chicken breasts (or thighs)
1 cup orzo pasta
2 cups chicken broth
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
2 cloves garlic, minced
1 lemon (zest and juice)
2 tbsp olive oil
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
Instructions
- Pat chicken dry and season with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat; sear chicken 5–7 minutes per side until cooked. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds. Add orzo and toast lightly.
- Pour in chicken broth; simmer 8–10 minutes until orzo is tender.
- Stir in heavy cream, Parmesan, lemon zest, and juice; cook until creamy.
- Slice chicken and serve over orzo. Top with parsley and extra Parmesan.
