Description

A comforting yet fresh Mediterranean dinner featuring tender grilled chicken over creamy, lemony orzo pasta. Perfect for weeknights or a cozy weekend meal, this dish balances richness with bright herbs and citrus.


Ingredients

2 boneless, skinless chicken breasts (or thighs)

1 cup orzo pasta

2 cups chicken broth

1/2 cup heavy cream

1/3 cup grated Parmesan cheese

2 cloves garlic, minced

1 lemon (zest and juice)

2 tbsp olive oil

2 tbsp fresh parsley, chopped

Salt and pepper, to taste


Instructions

  1. Pat chicken dry and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken 5–7 minutes per side until cooked. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds. Add orzo and toast lightly.
  4. Pour in chicken broth; simmer 8–10 minutes until orzo is tender.
  5. Stir in heavy cream, Parmesan, lemon zest, and juice; cook until creamy.
  6. Slice chicken and serve over orzo. Top with parsley and extra Parmesan.
