Description

These Mashed Potato Cheese Puffs are a savory snack or side dish dream come true—golden, crispy edges, melty cheese, and creamy mashed potatoes in every bite. Perfect for brunches, holiday parties, or using up leftovers, they’re fluffy inside and crispy outside. Bonus? They’re naturally gluten-free and freezer-friendly!


Ingredients

1 ½ cups mashed potatoes

1 cup shredded cheddar cheese

2 large eggs

¼ cup sour cream

¼ cup chopped green onions

½ teaspoon garlic powder

Salt and pepper to taste

1 tablespoon chopped parsley (optional, for garnish)


Instructions

1. Preheat the oven to 400°F (200°C) and grease a 12-cup muffin tin generously with non-stick spray or butter.

2. In a large mixing bowl, combine mashed potatoes, cheddar cheese, eggs, sour cream, green onions, garlic powder, salt, and pepper. Stir until the mixture is fully combined.

3. Spoon the mixture into the prepared muffin cups, pressing down gently. Fill each cup nearly to the top.

4. Top each puff with a pinch of extra shredded cheese.

5. Bake for 20–25 minutes or until the tops are golden brown and edges are crisp.

6. Let rest for 5 minutes before carefully removing them from the tin.

7. Garnish with chopped parsley and serve warm.

Notes

Make sure the mashed potatoes are thick and not too runny—this helps the puffs hold their shape.

Grease your muffin tin very well or use a silicone mold for easier removal.

These freeze great! Reheat from frozen in a 350°F oven until heated through.
