Ingredients
6 large sweet potatoes, peeled and cubed
½ cup brown sugar
¼ cup unsalted butter, melted
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional)
⅛ teaspoon salt
2 cups mini marshmallows
Instructions
1. Peel and chop the sweet potatoes into 1 to 1.5-inch cubes for even cooking.
2. In a large mixing bowl, combine sweet potato cubes with melted butter, brown sugar, cinnamon, nutmeg (if using), and salt. Mix until fully coated.
3. Transfer the mixture to a 6-quart Crock Pot and spread evenly.
4. Cook on LOW for 5–6 hours or HIGH for 2.5–3 hours, stirring once halfway through.
5. When potatoes are fork-tender and caramelized, sprinkle marshmallows on top.
6. Cover and let them melt on WARM or LOW for 5 minutes, or until soft.
7. Optionally, transfer to an oven-safe dish and broil briefly or use a kitchen torch to toast the marshmallows.
Notes
Cut all sweet potato chunks evenly to ensure consistent texture and cooking.
Add the marshmallows only after cooking to prevent them from dissolving into the mix.
