Ingredients
1 ½ cups cooked shredded chicken
½ cup sun-dried tomatoes, chopped
1 cup heavy cream
4 cups chicken broth
3 cloves garlic, minced
½ medium onion, diced
2 cups fresh spinach
4 oz cream cheese, softened
1 tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
1 tbsp olive oil or butter
Instructions
1. In a Dutch oven, heat olive oil or butter over medium heat. Sauté diced onion until soft, then add minced garlic and cook for 30 seconds.
2. Stir in sun-dried tomatoes and Italian seasoning. Cook for 1 minute to release their flavor.
3. Pour in chicken broth, then add heavy cream and cream cheese. Stir until smooth and gently simmering.
4. Add the shredded chicken and let it cook in the broth for 10–15 minutes to absorb flavor.
5. Add fresh spinach and stir until wilted. Season with salt, pepper, and red pepper flakes to taste.
6. Serve hot, optionally garnished with parsley or Parmesan.
Notes
For ultra-creamy texture, make sure the cream cheese is softened before adding.
You can swap spinach for kale or chopped zucchini for a twist.
