Ingredients
20 oz cheese tortellini, cooked and cooled
2 cups cooked chicken breast, diced
1/2 cup sun-dried tomatoes, sliced
1 cup fresh spinach, chopped
1/2 cup mayonnaise
1/2 cup Greek yogurt or sour cream
1/3 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Cook the tortellini in salted boiling water until al dente. Drain and rinse under cold water.
2. Dice the cooked chicken, slice the sun-dried tomatoes, and chop the spinach.
3. In a bowl, whisk together the mayonnaise, Greek yogurt or sour cream, Parmesan, and all seasonings until smooth.
4. Combine tortellini, chicken, sun-dried tomatoes, and spinach in a large bowl. Pour dressing over and toss to coat evenly.
5. Chill the salad for 30 minutes before serving to let flavors develop. Garnish with extra Parmesan if desired.
