Description

Mamaw’s Chicken and Rice Casserole is the ultimate comfort food. With tender chicken, creamy soup, fluffy rice, and a golden cheesy top, it’s the perfect family meal for busy weeknights or cozy gatherings. Make it ahead, freeze it for later, or serve it straight from the oven—this casserole never disappoints.


Ingredients

1 ½ cups cooked chicken

1 cup uncooked white rice

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

2 cups chicken broth

½ teaspoon salt

¼ teaspoon black pepper

1 ½ cups shredded cheddar cheese

4 slices cooked bacon, crumbled (optional)

2 tablespoons chopped green onions (optional)


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray or butter.

2. In a large mixing bowl, combine uncooked rice, cream of chicken soup, cream of mushroom soup, and chicken broth. Stir until smooth.

3. Fold in the cooked chicken and season with salt and pepper.

4. Pour the mixture into the prepared baking dish and spread it evenly with a spatula.

5. Cover tightly with aluminum foil and bake for 45–50 minutes, or until rice is tender.

6. Remove foil, sprinkle cheddar cheese and optional bacon over the top. Bake uncovered for an additional 10–15 minutes, until cheese is melted and bubbly.

7. Let sit for 5 minutes. Garnish with chopped green onions before serving.

Notes

You can substitute cream of celery soup if you prefer a less mushroom-forward flavor.

For added texture, stir in frozen peas, corn, or chopped broccoli before baking.

To save time, use shredded rotisserie chicken—it adds extra flavor too.
