Description

This Mac and Cheese Meatloaf combines two classic comfort foods into one hearty dish. A juicy, savory meatloaf forms the base, topped with rich, creamy mac and cheese that bakes to golden perfection. Perfect for family dinners or potluck gatherings!


Ingredients

1 ½ pounds ground beef

½ cup breadcrumbs

2 large eggs

½ cup finely diced onion

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

8 ounces elbow macaroni

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups milk

2 cups shredded cheddar cheese

½ teaspoon paprika or smoked paprika (optional)


Instructions

1. Preheat oven to 375°F (190°C).

2. In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic powder, onion powder, salt, and pepper until just combined.

3. Press meat mixture into a greased 9×13-inch baking dish. Flatten evenly.

4. Bake uncovered for 25–30 minutes until partially cooked.

5. While baking, boil macaroni in salted water according to package instructions. Drain and set aside.

6. In a saucepan, melt butter and whisk in flour to form a roux.

7. Gradually add milk, whisking until thickened.

8. Stir in shredded cheddar cheese until fully melted and smooth.

9. Layer cooked macaroni on top of baked meatloaf. Pour cheese sauce over evenly.

10. Return to oven and bake another 15–20 minutes until bubbly and golden on top.

11. Let rest for 5 minutes before slicing and serving.

Notes

Don’t overmix the meatloaf ingredients—gentle mixing ensures tenderness.

Use freshly shredded cheese for the smoothest, richest cheese sauce.
