Description

This Low Carb Chicken Casserole is a creamy, cheesy, and comforting meal that fits perfectly into a low-carb or keto lifestyle. With tender chicken, cauliflower florets, and a rich sauce baked to golden perfection, it’s an easy dish to prepare for weeknight dinners or make-ahead lunches.


Ingredients

1 ½ cups cooked chicken, shredded or diced

4 oz cream cheese, softened

½ cup sour cream

1 cup shredded cheddar cheese

½ teaspoon garlic powder

½ teaspoon onion powder

1 can (4 oz) diced green chiles (optional)

2 cups steamed cauliflower florets

Salt and pepper, to taste

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 casserole dish.

2. In a mixing bowl, combine cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth.

3. Add chicken, cauliflower, and green chiles to the bowl. Fold gently to coat everything in the creamy mixture.

4. Spread the mixture into the prepared casserole dish. Top with shredded cheddar cheese.

5. Bake uncovered for 20–25 minutes until hot and bubbly with a golden top.

6. Let rest a few minutes before serving. Garnish with parsley if desired.

Notes

Make sure the cauliflower is well-drained and patted dry to prevent excess moisture.

Rotisserie chicken works great for a shortcut—just remove skin and bones.

Add sautéed mushrooms or spinach for more flavor and nutrition.
