Loaded Potato Meatloaf is the ultimate comfort food mashup — combining seasoned ground beef with a creamy mashed potato center, crispy bacon, and melty cheddar cheese. Each slice is packed with rich flavor, gooey texture, and cozy baked potato vibes.
Ingredients
2 pounds ground beef
2 cups mashed potatoes (prepared and cooled)
1 cup shredded cheddar cheese
6 slices cooked bacon, chopped
2 large eggs
1 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped chives or green onions
Instructions
1. Make your mashed potatoes ahead and season with salt, pepper, and butter. Let them cool.
2. In a large bowl, mix together ground beef, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper. Do not overmix.
3. Grease a loaf pan and press half of the meat mixture into the bottom and up the sides to form a cavity.
4. Fill with mashed potatoes and sprinkle bacon and 1/2 cup of the cheese over it.
5. Cover with remaining meat mixture, sealing edges.
6. Cover with foil and bake at 375°F for 40 minutes.
7. Remove foil, top with remaining cheese, and bake another 15–20 minutes until cheese is golden.
8. Rest for 10 minutes before slicing.
9. Garnish with chopped chives or green onions and serve.
Notes
Use cold mashed potatoes so they layer neatly and don’t mix into the meat.
Don’t skip resting time after baking — it makes slicing cleaner and easier.
For extra richness, add a tablespoon of sour cream to the mashed potato layer.
