Description

Loaded Cobb Pasta Salad is a hearty mix of rotini pasta, grilled chicken, cherry tomatoes, avocado, and corn tossed in creamy dressing. Perfect for summer lunches, BBQ sides, or meal prep!


Ingredients

230 g rotini or fusilli pasta

2 grilled chicken breasts

200 g cherry tomatoes, halved

1 avocado, sliced

150 g corn (fresh or thawed frozen)

120 ml ranch or blue cheese dressing

2 tablespoons fresh parsley or chives, chopped

salt and black pepper, to taste


Instructions

1. Cook pasta in salted water until al dente. Drain and rinse under cold water.

2. Season chicken with salt, pepper, and olive oil. Grill until fully cooked. Let rest, then slice.

3. Halve tomatoes, slice avocado, and prepare corn (grill if fresh, thaw if frozen).

4. Combine pasta, chicken, tomatoes, avocado, and corn in a bowl. Toss with dressing.

5. Season with salt, pepper, and herbs. Serve chilled or room temp.

Notes

For meal prep, store avocado and dressing separately to keep fresh.

Toss avocado in lemon juice to prevent browning.
