Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup plain yogurt
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. Set aside. In a large bowl, cream together the butter and sugar until light and fluffy using a hand or stand mixer.
  5. Beat in the eggs one at a time.
  6. Stir in the vanilla extract.
  7. Alternately add the dry ingredients and the yogurt to the butter mixture, beginning and ending with the dry.
  8. Mix until just combined

  10. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes.
  12. Transfer to a wire rack and cool completely.
  13. Dust with powdered sugar before serving if desired.

Notes

For an extra moist cake, add 2 tablespoons of neutral oil with the butter.

You can substitute Greek yogurt, but thin it with a splash of milk for a smoother batter

. Do not overmix once the dry and wet ingredients are combined—this keeps the cake soft and tender.
