Description

Ingredients

6 egg whites

3/4 cup granulated sugar

1/2 cup all-purpose flour

2 tablespoons cornstarch

1 teaspoon baking powder

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 cup fresh berries (optional)


Instructions

1. Preheat oven to 325°F (163°C). Grease and line an 8-inch round cake pan with parchment paper.

2. In a clean bowl, beat egg whites until foamy. Gradually add sugar and continue beating until stiff, glossy peaks form.

3. In a separate bowl, sift together flour, cornstarch, and baking powder. Gently fold the dry ingredients into the egg whites using a rubber spatula.

4. Pour batter into the prepared pan. Bake for 25–30 minutes or until golden and a toothpick inserted comes out clean.

5. Let the cake cool completely in the pan before removing. Slice the cake horizontally to make two even layers.

6. In a cold mixing bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.

7. Spread whipped cream on the bottom cake layer, then top with the second layer. Dust with powdered sugar and garnish with fresh berries if desired.

8. Chill before serving for best texture.

Notes

Use a metal or glass bowl for best whipping results—plastic can retain oils and interfere with peaks.

Chill your mixing bowl and beaters before whipping cream for extra stability.

For a flavor twist, fold a bit of lemon zest or almond extract into the whipped cream.
