Ingredients
2 boneless chicken breasts
12 oz pasta (farfalle or preferred)
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic
1 medium zucchini
1 large lemon
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente then reserve pasta water and drain
2. Season chicken with salt and pepper then cook in olive oil until golden and fully cooked then slice
3. Melt butter in the same pan and sauté garlic until fragrant
4. Add zucchini and cook until tender but slightly crisp
5. Add fresh lemon juice and a splash of pasta water to create sauce
6. Return chicken and pasta to the pan and toss to combine
7. Add Parmesan cheese and parsley then mix and serve warm
