Ingredients
2 cups cooked shredded chicken
3/4 cup orzo pasta
2 carrots, peeled and sliced
2 celery stalks, chopped
1 small onion, diced
3 garlic cloves, minced
6 cups chicken broth
2 tablespoons olive oil or butter
Juice and zest of 1 lemon
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Lemon slices, for garnish (optional)
Instructions
- In a large soup pot, heat olive oil or butter over medium heat.
- Add onion, carrots, and celery. Cook for 5-7 minutes until vegetables soften.
- Stir in the garlic and cook for 1 more minute.
- Pour in the chicken broth and bring to a gentle boil.
- Reduce heat and simmer for 10 minutes.
- Add orzo pasta and cook for 8-10 minutes until tender.
- Stir in shredded chicken and cook for 3-5 minutes to warm.
- Add lemon juice and zest, then season with salt and pepper.
- Serve hot, garnished with parsley and lemon slices.
