A creamy, comforting one-dish casserole that blends tender chicken and fluffy rice with a savory blend of soups and spices. It’s the perfect no-fuss dinner for busy days, packed with flavor and always satisfying.
Ingredients
1 ½ pounds boneless, skinless chicken thighs or breasts
1 cup uncooked long grain white rice
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
2 cups low-sodium chicken broth
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 cup shredded cheddar cheese (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. In a large bowl, whisk together the cream of mushroom soup, cream of chicken soup, chicken broth, onion powder, garlic powder, paprika, salt, and pepper until smooth.
3. Stir in the uncooked rice until evenly mixed.
4. Pour the mixture into the prepared baking dish and place chicken pieces on top, pressing them slightly into the mixture.
5. Cover the dish tightly with aluminum foil and bake for 60 minutes.
6. Remove foil and, if desired, sprinkle with cheddar cheese. Bake uncovered for another 10–15 minutes until cheese is melted and top is golden.
7. Let rest for 5–10 minutes before serving.
Notes
Use chicken thighs for juicier results, or breasts for a leaner option.
Avoid instant or parboiled rice; they cook too quickly and may turn mushy.
Add a splash of broth when reheating to bring back the creamy consistency.
