Description

This Korean BBQ Beef Bowl features juicy, marinated beef served over fluffy white rice, paired with sweet sautéed corn and a creamy dipping sauce with a hint of spice. It’s quick to prep, incredibly flavorful, and perfect for meal prep or casual dinners alike.


Ingredients

1 lb ribeye or sirloin beef, thinly sliced

1/4 cup soy sauce

2 tbsp brown sugar

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp sesame oil

2 cups cooked white rice

1 cup sweet corn kernels

1 tbsp butter

2 tbsp chopped fresh cilantro

1/4 cup mayonnaise

2 tbsp sour cream

1/4 tsp crushed red pepper flakes

1 tsp lime juice


Instructions

1. Combine soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl. Add beef slices and marinate for at least 30 minutes or overnight.

2. Cook white rice according to package directions. Fluff and set aside.

3. Heat a cast iron skillet or grill pan over high heat. Add marinated beef in a single layer. Sear for 1–2 minutes per side until caramelized.

4. In another skillet, melt butter and sauté corn until slightly charred and golden. Add chopped cilantro and a pinch of salt.

5. In a small bowl, mix mayonnaise, sour cream, crushed red pepper, and lime juice to make the dipping sauce. Chill until serving.

6. Assemble bowls with rice on the bottom, then top with beef, corn, and a spoonful of creamy sauce. Garnish with fresh cilantro.

Notes

For easier slicing, partially freeze the beef before cutting.

Marinate the beef overnight for the most flavor-packed result.
