Ingredients
1 lb ground turkey (85/15)
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
4 slices provolone cheese
2 medium yellow onions, thinly sliced
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon butter
4 brioche buns
1 cup fresh arugula or baby greens
Instructions
1. In a bowl, combine ground turkey, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently and form into 4 equal patties.
2. Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and cook for 20–25 minutes, stirring occasionally. Add balsamic vinegar and continue to cook until thickened and syrupy, about 5–7 minutes.
3. In a cast iron skillet or grill pan, cook turkey patties over medium heat for 5–6 minutes per side until internal temperature reaches 165°F. Add provolone slices during the last minute and cover to melt.
4. Toast the brioche buns cut-side down in a skillet or grill until golden brown.
5. Assemble: place greens on bottom bun, top with turkey patty and melted cheese, then caramelized onions. Add top bun and serve immediately.
Notes
Don’t rush the onions. Low and slow caramelizing brings out their natural sweetness.
Use a meat thermometer to avoid overcooking the patties—165°F is the magic number.
Toasted buns make a big difference! Always toast right before serving for texture.
