Ingredients

1 pound ground beef

1 packet taco seasoning

1 medium red bell pepper, diced

1 small onion, diced

1 can (10 oz) diced tomatoes with green chilies, drained

1 cup corn kernels (frozen or canned, drained)

1/2 cup sour cream

1/2 cup mayonnaise

2 cups shredded cheddar cheese, divided

2 cups Bisquick baking mix

1/2 cup milk

2 large eggs


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 casserole dish.

2. In a mixing bowl, combine Bisquick, milk, and eggs until well mixed. Spread into the casserole dish to form the base.

3. In a skillet over medium heat, cook the ground beef until browned. Drain fat.

4. Add taco seasoning, diced red bell pepper, and onion. Cook until soft and fragrant.

5. Stir in the drained tomatoes with green chilies and corn. Simmer for 5 minutes.

6. In a separate bowl, mix sour cream, mayonnaise, and 1 cup of shredded cheese.

7. Layer the beef mixture over the biscuit base, spread the creamy mixture on top, then sprinkle the remaining cheese.

8. Cover loosely with foil and bake for 30–35 minutes. Remove foil for the last 10 minutes for a bubbly golden top.

9. Let it rest for 10 minutes before slicing and serving.
