Description

These Jalapeno Popper Egg Rolls are everything you love about the classic appetizer — spicy jalapenos, creamy cheese, crispy bacon — all wrapped in a golden egg roll shell. Perfect for parties, snacks, or make-ahead freezer treats, they’re crunchy, cheesy, and irresistibly good.


Ingredients

8 oz cream cheese, softened

1 cup shredded cheddar cheese

2 jalapenos, diced (seeds removed for less heat)

4 slices cooked bacon, crumbled

2 green onions, finely chopped

1/2 teaspoon garlic powder

10 egg roll wrappers

Vegetable oil for frying


Instructions

1. In a large mixing bowl, combine cream cheese, shredded cheddar, jalapenos, bacon, green onions, and garlic powder. Mix until smooth and well combined.

2. Place one egg roll wrapper on a clean surface in a diamond shape. Spoon 2 tablespoons of filling into the center.

3. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal.

4. Heat oil in a deep fryer or heavy-bottomed skillet to 350°F (175°C).

5. Fry 2–3 rolls at a time for 3–4 minutes or until golden brown and crisp. Remove and place on a paper towel-lined plate.

6. Cool slightly before serving. Enjoy with ranch or your favorite dipping sauce.

Notes

Use an air fryer at 375°F for 8–10 minutes for a lighter version.

Freeze uncooked rolls for up to 2 months and fry from frozen.

For extra heat, leave the jalapeno seeds in or add a pinch of cayenne.
